Karupatti Halwa is prepared by cooking wheat flour with milk to form a smooth wheat milk base. Separately, pure palm jaggery is melted with water to make a thick jaggery syrup.
The palm jaggery syrup is slowly blended with the wheat milk over low heat. Pure ghee is added generously and gradually, stirred continuously until the halwa thickens, turns glossy, and releases a rich ghee aroma. Finally, it is garnished with cashew nuts in pure ghee, enhancing both taste and richness.
