How to make:
1.Heat oil in a pan and add mustard seeds, fenugreek seeds, and curry leaves. Once they splutter, add chopped shallots and garlic. SautƩ until they turn golden brown.
2.You can add vegetables like drumsticks, eggplant, or okra at this stage and cook them until they are partially done
3.Add the Vatha kuzhambu powder to the pan and sautƩ for a minute to release the flavors of the spices.
4.To make tamarind extract, soak tamarind in hot water and extract the juice.
5.Add tamarind extract along with salt to the pan.
6.Allow the mixture to simmer until the raw taste of tamarind is gone and gravy thickens to the desired consistency
